:


a good Arabica,
ground grey pepper,
cinnamon
white, grey or red pepper

One can add a lot of things in coffee, but the mix of pepper and cinnamon is particularly pleasant. For 8 doses of coffee, mix half a dose of pepper, and half a dose of cinnamon. Mix and out in your usual coffee making.


When you want to prepare your coffee he traditional Moroccan way, boil a litre of water and, at boiling point, add one by one eight teaspoon of ground coffee, with a teaspoon of pepper and cinnamon, and stir.


Let boil for three minutes, and keep for two minutes, pass the coffee in a fine sieve, or a filter, to prevent pouring some ground in the cup. Sugar, savour.


You can also use other spices, like ginger, or nutmeg
