Ingredients :
For 4 persons
1 rabbit cut into 10 pieces
250 grams white rice
4 onions
2 garlic cloves
1 lemon
1 thyme branch
4 tablespoon olive oil
0,2 grams saffron
A pinch of powdered chilli
Salt and pepper

- The day before, prepare your saffron by diluting
it in cold water. Filter before use
- Peel the onions, and cut them into very thin
slivers. Peel the garlic cloves, remove the germs and press them.
In a cast iron pot, heat olive oil, and brown the rabbit pieces
on all sides. When the meat has a nice colour, remove it and save
it on a plate.
- Brown then the onions and the garlic, then
add the rabbit, thyme, salt and pepper, and half a litre of boiling
water. Cover and let simmer for 20 minutes.
- Then add the rice, the saffroned water, the
chilli powder and mix.
- Let cook for at least 20 more minutes, till
the rice has absorbed all the broth.
- Serve warm, with a little bit of lemon juice.
