Ingredients :
For 4 persons
225 grams rice (round rice if possible)
100 grams cultivated mushrooms
25 grams butter
1 litre vegetable broth
50 grams parmesan in slices
A pinch of saffron
Salt and pepper

- Sliver the mushrooms
- In a non-stick pan, moderately heat the butter
- Brown the mushrooms for 3 minutes, stirring
them
- Add the rice and saffron, and stir for two
minutes.
- Add a quarter of the broth. Stir till the liquid
is absorbed, and add slowly half of the rest of the broth, still
stirring.
- Let cook 10 to 15 minutes, till total absorption.
- Add the rest of the broth, and stir till it
simmers. Cover. Cook 1à to 15 minutes : the rice must be
soft, and all the broth absorbed.
- Add salt and pepper, and parmesan.
- Serve.
